Lentil Veggie Soup

Lentil Veggie Soup



  • 2 Tablespoons of Olive oil
  • 1 Cup of Onions diced
  • 2 Cups of Carrots diced
  • 1 Cup of Celery diced
  • 1 Cup of Green Beans chopped
  • 5 Cups of Veggie broth
  • 1 Cup of Canned tomatoes diced
  • ½ Teaspoon of Pepper
  • 1 Teaspoon of Salt
  • 1 Cup of Parsley chopped
  • 1 Cup of Kale
  • 2 Cups of Brown lentils cooked
  • 2 Cups of Rice


  • In a pot add 2 Olive oil, Onions, Carrots, Celery, Green Beans, Veggie broth, Canned tomatoes, Pepper, Salt, and Parsley, and let it simmer for 20 minutes.
  • After those 20 minutes add in Kale, Brown lentils, and Rice.
  • Mix everything, serve and enjoy!
