Leeann Chins Original Noodle Recipe
I loved the original noodles at Leeann Chins and here's my copy cat version. A big thank you to the recipe Leeann Chins corporate shared with me. It was a great starting point (fine details left out since things are prepackaged at the stores and done in bulk).
- 1 package rice sticks rice noodles
- 2 tbsp soy sauce
- 1/2 tbsp accent seasoning
- 4 tbsp olive oil
- About 1/2 cup finely chopped carrots more or less for your taste
Soak noodles in really hot water for 10 minutes...like tap water that's fully heated up.
While that's soaking, chop the carrots and set aside.
Also mix the soy sauce and accent together in a small bowl.
Heat up a wok or large frying pan on the stove. When it starts to smoke add 2 tbsp of the olive oil to the pan.
When the noodles are done soaking, drain them and pat dry.
Put noodles in a bowl. Add remaining 2 tbsp olive oil and mix up. Add soy sauce and seasoning and mix up so noodles are evenly colored. Add carrots and mix up.
Put complete mixture in frying pan/wok. Add a tbsp or 2 of water and cover. Let steam for 30 seconds. Flip over and cook until they are hot all the way through...doesn't take long. Enjoy!
