Skinny Crab Cakes
Ingredients
- 2 tablespoons of Green bell pepper diced
- 2 tablespoons of Red bell pepper diced
- 1 tablespoon of Chives
- 1 tablespoon of fresh parsley
- 8 oz of jumbo lump grab meat
- 1 Egg
- 6 Simple Mills crackers
- 1 tablespoon of light mayo
- ½ tablespoon of worcestershire
- ½ lemon juiced
- 1 teaspoon of Old Bay
- 1 teaspoon of garlic powder
- Pinch of sal
- ¼ teaspoon of pepper
Sauce
- 1 tablespoon of light mayo
- 1 tablespoon of dijon
- 1 tablespoon of lemon juice
- ¼ teaspoon of Swerve
- ⅛ teaspoon of paprika
Instructions
- To a bowl, add diced red and green bell peppers, chives, fresh parsley, jumbo lump grab meat, a whisked egg, crumbled Simple Mills crackers, light mayo, worcestershire, lemon juice, Old Bay, garlic powder, a pinch of salt and pepper and gently fold it all together. Cover and refrigerate for 1 hour.
- Once chilled, drain all the excess liquid and form into 4 even mounts. Place them on a lightly greased baking sheet and bake at 225 F for 10 mins and then under the broiler for 3 mins.
- For the sauce combine all the ingredients and serve with the crab cakes.
