Mexican Shrimp Corn Salad
Ingredients
- 3 Corns
- Mayonaise to taste
- Sour cream to taste
- Garlic to taste
- Lime Juice to taste
- Lime Zest to taste
- Chili powder to taste
- Salt to taste
- Bell Pepper to taste
- Jalapeno to taste
- Cilantro to taste
- Cottage cheese to taste
Instructions
- Grill the cobs with melted butter, once ready, shave the kernels. You can also use frozen corn.
- For the sauce, mix the mayonnaise, sour cream, lime juice, lime zest, chili powder and salt in a small bowl.
- Toss the corn kernels with some bell pepper, jalapeno, cilantro, cottage cheese and the creamy spicy sauce.
