Lazy Enchiladas

  • Baking dish


  • 1 box of Taquitos Preferably the chicken and cheese one but you can choose your favorite one
  • Cheese Mexican blend
  • 1 can of Las Palmas green chile enchiladas sauce


  • Lettuce Shredded
  • 1 Tomato Chopped
  • 1 Red onion Chopped
  • A little bit Cilantro


  • Let's start with heating up the Taquitos. Spray the bottom of a baking dish with cooking spray, place all the Taquitos and then spray the top again with the cooking spray. (Another way to heat them up is by using an air fryer)
  • Bake the Taquitos at 450° F for 10-12 minutes
  • While waiting for the Taquitos to be ready, prepare the vegetables (lettuce, tomato, red onion and cilantro) for the topping
  • When the Taquitos are done, carefully remove them from the oven and pour 2 cups of the enchiladas sauce over them
  • Top it out with the Mexican blend cheese, to taste
  • Place it back in the oven for about 10 minutes or until the cheese is nice and melted


For sides, you can eat them with fried beans or rice or you can just eat them like that with lots of toppings! Don’t forget to add your Mexican sauce.
