Hungarian Mushroom Soup

4 tbsp salted butter
2 cups onions, chopped
1 1/2 lb mushrooms, sliced (use crimini, button, etc.)
2 tsp dried dill weed
1 tsp dried thyme
1 tsp dried mushroom powder or umami seasoning
1 tbsp sweet paprika
2 cloves garlic, minced
1 tbsp lemon juice
2 tbsp soy sauce
2 1/2 cups low sodium chicken broth
Simmer for 10 minutes
Mix these three ingredients together and add to pot
3 tbs all-purpose flour
1/2 cup half and half
1/2 cup whole milk
Simmer on low for 10 minutes
Remove from heat and add 1/3 cup room-temperature sour cream
