30 Minute Vegetarian Pho

This easy-to-make pho soup is sure to delight all who try it.

Serves: 4-6 servings
  • 64 oz vegetable broth (if you didn't want vegan, you could use chicken or beef and I also recommend a low-sodium, if you can find it)
  • 6 green onions, sliced
  • ¼ tsp ground ginger
  • salt to taste
  • 1½ tbsp butter (we used vegan butter)
  • 8 oz shiitake mushrooms, remove stems
  • 1½ tsp hoisin sauce
  • 2 tsp sesame oil
  • 14 oz rice noodles, cooked
  • 8 oz bean sprouts
  • fresh cilantro, basil, lime for serving
  1. Combine vegetable broth, onions, ginger and salt in a large pot.
  2. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Melt the butter over medium heat.
  5. Add mushrooms and saute for about 6 minutes or until tender - stir frequently.
  6. Add in hoisin sauce and sesame oil and cook until the the sauce thickens.
  7. Once the sauce thickens, cook for about 1 minute more, stirring frequently.
  8. Remove from heat.
  9. Divide the noodles between 4 to 6 large bowls.
  10. Add even amounts of the broth.
  11. Add bean sprouts, mushrooms and other fresh ingredients to taste.
