Rosemary Cashews

These are so good! A great friend brought them to share at a class I was taking and I didn't leave that night without the recipe. I just couldn't. I made a special trip to Costco to pick up cashews the very next day in freezing temperatures. My family loves them too...that's always a bonus.
Recipe type: Appetizer
Serves: 2.5 pounds
  • 2.5 pounds unsalted cashews
  • 2 tablespoon butter
  • 2 tablespoon rosemary, dried, or 4 tablespoons fresh
  • 1 teaspoon cayenne pepper
  • 2 tablespoon brown sugar
  • 2 tablespoon salt
  1. Place cashews on a baking sheet in the oven for about 10 minutes at 350 to warm them up. Melt the butter in a bowl and then add the remaining ingredients. Mix well. Pour over warmed cashews and mix until well coated. I poured the cashews into a bowl, poured the mixture over them, put on a lid and shook them up well. Let them cool and enjoy.
