Crispy Polenta Fries
Ingredients
- 4 cups of water
- 1 Tsp of salt
- 1 cup of Red Mill corn grits polenta
- 1 Tbsp of nutritional yeast
- 1 Tsp of garlic powder
- Sprinkle of pepper
- Olive oil spray
- Truffle salt
- Parsley
- Vegan parmesan
Instructions
- Bring water and salt to boil. Then add 1 cup of Red Mill corn grits polenta.
- Cook for 30 minutes on low heat.
- Season with nutritional yeast, garlic powder, and pepper.
- Pour the polenta into an 8×8 inches pan with parchment paper and set in the fridge for 30 minutes.
- Once cold, cut into fries.
- Spray with olive oil and bake for 30 minutes at 425 F.
- Top with truffle salt, a sprinkle of parsley and vegan parmesan to taste.
