Crispy Polenta Fries

Total Time 1 hour 30 minutes


  • 4 cups of water
  • 1 Tsp of salt
  • 1 cup of Red Mill corn grits polenta
  • 1 Tbsp of nutritional yeast
  • 1 Tsp of garlic powder
  • Sprinkle of pepper
  • Olive oil spray
  • Truffle salt
  • Parsley
  • Vegan parmesan


  • Bring water and salt to boil. Then add 1 cup of Red Mill corn grits polenta.
  • Cook for 30 minutes on low heat.
  • Season with nutritional yeast, garlic powder, and pepper.
  • Pour the polenta into an 8×8 inches pan with parchment paper and set in the fridge for 30 minutes.
  • Once cold, cut into fries.
  • Spray with olive oil and bake for 30 minutes at 425 F.
  • Top with truffle salt, a sprinkle of parsley and vegan parmesan to taste.
