As you know, I really love summer salads and here’s another great one!  I first came across this recipe here and couldn’t wait to make it.  It was a huge hit with the hubby and myself.  We made a large batch, as usual.  We like to have enough for dinner and for lunches for the next few days.  Sometimes these salads are even better the next day!

Servings 12 servings

  • 1 small onion finely chopped
  • 3 cups diced chicken – I used the rotisserie diced chicken available at my local Cub Foods
  • 1 cup mayo
  • 1/2 cup sour cream
  • 3 tbsp chopped fresh parsley
  • 3 tbsp chopped fresh dill
  • 3 tbsp chopped fresh chives
  • 1 minced garlic clove
  • 1 freshly squeezed lemon
  • 2 tbsp buttermilk

  • salt and pepper to taste

  • Place potatoes, chicken, bacon, and onion in a bowl. Combine remaining ingredients except salt and pepper to make dressing. Pour dressing over other ingredients and gently blend. Add salt and pepper to taste.
